Mexi-Cajun Cornbread Mix
In a large, deep skillet or deep fryer, heat oil to 325 degrees.
Rinse franks of any residual oil to allow batter to more easily adhere.
Mix cornbread according to directions on package. Pour into a tall glass. Thread each frank onto a skewer, then dip into cornbread batter until its whole length has been covered.
Pull the covered frank from the batter and allow any excess to drip off. Submerge into hot grease and allow to cook until cornbread begins to turn a light golden brown.
Remove from grease and allow to cool on paper towels.
Serve with your favorite condiments and Violá!
