Welcome to our January Cajun Crate! Our box this month focuses on the lighter side of Cajun eating. Cajun food is often rich and heavy but this box can help you cook like a Cajun while trying to maintain a healthy diet. From low-fat roux to low sodium bisque, this box is still packed with flavor!
Tabasco Green Sauce is not too hot, not too mild. TABASCO® brand Green Jalapeño Pepper Sauce is a must for Mexican food. Add it to guacamole, salsa, tacos and burritos.
Fiesta Guacamole
  • 3 medium avocados, halved and pitted
  • 3 tablespoons fresh lime juice
  • 1 (2-ounce) bottle TABASCO® brand Green Jalapeño Pepper Sauce (about 1/4 cup)
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons chopped onion
  • 3 medium plum tomatoes, diced
  • Salt to taste
Scoop avocado pulp from shells into a medium bowl and mash with a fork, leaving some chunks. Gently stir in lime juice, TABASCO® Green Sauce, cilantro, onion, tomatoes, and salt.

Guidry’s Seasoned Gumbo Mix is an authentic cajun gumbo in three easy steps. This is a seasoned gumbo mix that you add your own chicken and sausage. Guidry’s gumbo is made with a fat free roux, a recipe for the ultimate cajun food.
Chicken & Sausage Gumbo
Place 12 cups of water in stockpot and bring to a boil
Lower heat to a medium boil and add entire contents of packet to water
Cook for 30 - 45 minutes, stirring occasionally
Add 1 pound of smoked sausage and 2 pounds of unseasoned chicken meat
Cook for an additional 45 minute
Serve over rice

Cajun "Grilled, Dusted & Crusted" Pork Tenderloin
Prepare tenderloin by removing all fat and the silver skin. Season generously with Louisiana Fish Fry Cajun Blackened Seasoning. Place directly on hot grill and sear for 2 minutes on each side; turning once (this sears the seasoning into the meat for optimum flavor). Remove from grill and place on sheet of aluminum foil. Spread olive oil over entire tenderloin and then wrap tightly with foil. Cook on indirect heat for 45 minutes or until internal temperature reaches 155°, turning every 10 minutes.

Grilled Fish Avocado Taco
Ingredients
  1. 1lb tilapia
  2. 2 tbsp olive oil
  3. 1 1/2 tbsp fresh lime juice
  4. 1 garlic clove, minced
  5. 2 tbsp Hanley's Avocado dressing
  6. 1 1/2 tsp chili powder
  7. 1 1/2 tsp ground cumin
  8. 1/2 tsp ground paprika
  9. 6 corn tortillas
  10. 1 avocado

Directions
  1. Mix all above ingredients (except the avocado, tortillas, hanley's dressing) together with fish to marinade for 20 min.
  2. Then heat grill & cook fish for 3 min each side.
  3. Pour hanley's dressing on fish before removing from grill.
  4. Place chopped fish on tortilla with sliced avocado or your favorite toppings!
  5. Enjoy!

1/2 cup Guidry’s Organic Pecans, chopped in food processor
¼ cup shredded parmesan cheese
1 slice bread
1½ tablespoon dried rosemary
½ tablespoon dried thyme
½ tablespoon lemon pepper
1 tablespoon white onion flakes
Dash salt
1 egg
2-3 tilapia filets
2 tablespoons Guidry’s Organic Pecan Oil

Toast bread in the oven on 350° for about 5-7 minutes until firm but not toasted and then cut into cubes.

In food processor, pulse the pecans until finely ground. Remove pecans and place in medium bowl. In the food processor add cheese, bread and rosemary. Pulse until bread is ground and everything is combined. Add to the bowl with the pecans. Add thyme, lemon pepper, white onion flaked, and salt and mix everything together until well combined.

In a separate bowl, crack and whisk the egg.

Pat the tilapia filet dry and sprinkle with salt and pepper. Dip the filet into the egg to coat and then dip the egg-coated tilapia into the breading, generously coated.

In a skillet, add pecan oil and heat over medium heat. Once heated, cook the tilapia for about 3-4 minutes on each side or until flaky.
